Salmón de Chile squares with roast potatoes
(Makes 4 servings)

Ingredients:
• 1 1/2 kilo of Salmón de Chile
• Salt and pepper
• 2 eggs
• 250 grs of flour
• 250 cc of beer
• Canola vegetable oil, to fry
• Lemon Juice or slices of lemon to serve


Preparation:
1. Cut the salmon into big cubes of 5 cm and add salt to taste.
2. Dredge in flour and shake any excess flour.
3. Mix in a bowl: the eggs, flour and beer. Add salt and pepper.
4. Dredge the salmon in the flour mixture and fry in very hot oil for a couple of minutes, until brown.
5. Take out from the pan and leave to dry on a paper towel.
6. Serve immediately with some drops of lemon juice and roast potatoes.
7. For the roast potatoes: cleaned and cut 4 to 5 potatoes into cubes, add salt and roast with butter or olive oil. You can add herbs such as tarragon or rosemary.
