Salmón de Chile apple shot
(Makes 4 servings)

INGREDIENTS

• 700 grs of Salmón de Chile skinless fillets
• 3 of tender celery stalks, pealed and cut in small slices
• 1 green apple, pealed and cut in small cubes
• 1/2 chopped red onion
• 1 tsp of sesame oil
• 60 cc of lemon juice
• lemon zest
• 1 tbsp of toasted sesame seeds
• Rock Salt and freshly ground pepper

PREPARATION

1. Cut the salmon and the apple into small cubes, and the celery into slices.
2. Mix the salmon, celery, apple and red onion in a bowl.
3. Add sesame oil, lemon juice and sprinkle lemon zest to the mixture. Set aside in the refrigerator for 10 minutes.
4. To serve, place the salmon mixture in a small glass and sprinkle with toasted sesame seeds.
