Ingredients:
• 6 fillets of Salmón de Chile, of 180 grams each
• 250 grams of Mozzarella cheese or a similar one
• 3 ripe tomatoes
• 1 cured Spanish type chorizo
• 3 tbsp of olive oil
• 2 tbsp of oregano
• salt and pepper to taste
• Juice of 1/3 of a lemon
• Aluminum foil to wrap
Preparation:
1. Season the salmon fillets with lemon juice and olive oil.
2. Cut six pieces of square foil of 20 cm to wrap the fillets.
3. Place the salmon fillets on each square foil, and cover each fillet with very thin slices of chorizo, cheese and sliced tomatoes.
4. Season with oregano and wrap with the foil.
5. Arrange the wrapped fillets in a refractory dish and cook in a pre-heated oven at 200ºC, for 20 minutes or until the salmon is tender.
6. Serve hot accompanied by salads
